Ingredients

 Oil1 Tablespoon
 1/2 lb/250 g ground pork
 7-8 hot chilli peppers - whole
 Garlic3 Clove (5gm), chopped
 Ginger slice2 , chopped
 Squid1 Dozen, cleaned
 Mint1 Bunch (100gm), chopped
 Lime1
 Cilantro

Directions

MAKING
1. In a fry pan heat the oil, add the pork and chilli peppers and stirring energetically with a fork, cook over a high heat for about 5-10 minutes.
2. Stir in the garlic and ginger.
3. When the pork is cooked, cut open the squid tubes, lay them flat and score into a diamond pattern with a sharp knife, Cut into bite sized pieces.
4. Put in the squid to the pork mixture, stir, add the mint and lime juice.

SERVING
5. Cook for 2 minutes and serve on a plate garnished with the chopped cilantro.
