Ingredients

 
3 lb. yellow squash, sliced
 
2 onions, chopped
 
2 carrots, sliced
 
2 cans cream of chicken soup
 
1 carton sour cream
 
1 sm. jar pimento, chopped
 
1/2c. butter
 
1 pkg. herb-seasoned stuffing mix

Directions

Cook squash, onions and carrots together in salted water to cover until tender; drain well.
Add soup, sour cream and pimento.
Melt butter; stir in stuffing mix.
Spread half the stuffing mix in greased casserole.
Pour in squash mixture; cover with remaining stuffing mix.
Bake at 375 degrees for 45 minutes.
