Ingredients
4 large scallop (pattypan) squash
Boiling, salted water
2 to 3 tablespoons butter or margarine
Salt and pepper to taste
2 medium-sized tomatoes
8 slices (6 oz.) American cheese
Directions
Cut squash in half crosswise; cook in boiling, salted water until tender (about 15 minutes); drain.
Season with butter, and salt and pepper to taste.
Keep hot.
Cut each tomato in 4 thick slices (don't use ends); lay the slices on a broiling pan.
Season with salt and pepper and place a slice of cheese on each slice of tomato.
Broil slices 6 inches from broiler for 2 to 3 minutes, or until cheese is melted and begins to brown.
Season with butter, and salt and pepper to taste.
