Squash Skillet Recipe

2 Tbsp. water
 
1/2 tsp. salt
 
2 small sliced zucchini squash
 
2 small sliced yellow crookneck or pattypan summer sauash
 
1 small bunch fresh broccoli, split each stalk in 1/4 ths and cut in 1" pieces
 
1/2 lb. fresh sliced mushrooms
 
1/4 tsp. lemon pepper
 
2-3 Tbsp. butter

Directions

In 10" glass skillet combine water and salt.
Add squash, broccoli, and mushrooms.
Toss to blend.
Sprinkle with pepper; dot with butter.
Microwave (high), covered, 10-12 minutes, stirring halfway through cooking.
Rest, covered, 5 minutes.
