Squash Kebabs Recipe
these squash kebabs are marinated vegetable kebabs. Made with zucchini, yellow squash and cherry tomatoes, the squash kebabs are crispy and fresh.
Ingredients
1 tablespoon reduced sodium soy sauce
1 tablespoon red wine vinegar
1 tablespoon Oriental sesame or peanut oil
2 teaspoons honey
1/4 teaspoon ground ginger
1/8 teaspoon hot red pepper sauce
1 small zucchini, halved lengthwise and sliced 1/4 inch thick
1 small yellow squash halved lengthwise and sliced 1/4 inch thick
12 small cherry tomatoes
Directions
In a large bowl, combine the soy sauce, vinegar, sesame oil, honey, ginger, and red pepper sauce.
Add the zucchini, yellow squash, and cherry tomatoes, toss well, and cover with plastic wrap; let sit for 2 hours at room temperature.
Preheat the broiler and remove the broiler pan.
Using a slotted spoon, transfer the vegetables from the marinade to a large plate.
Thread the vegetables on 4 10 inch skewers, alternating the zucchini, cherry tomatoes, and yellow squash.
Place the skewers on the broiler pan rack and brush with the marinade.
Set the broiler pan about 8 inches from the heat and broil for 5 minutes, turning the skewers 2 or 3 times and brushing each time with the marinade.
Add the zucchini, yellow squash, and cherry tomatoes, toss well, and cover with plastic wrap; let sit for 2 hours at room temperature.
