Ingredients

 Eggs2 , separated into yolks and whites
 Cream of tartar1⁄8 Teaspoon
 Honey2 Tablespoon
 Winter squash1 Cup (16 tbs), pureed
 Skim milk3⁄4 Cup (12 tbs)
 Cinnamon powder1 Teaspoon
 Nutmeg powder1⁄4 Teaspoon
 Ginger powder1⁄4 Teaspoon
 Oil1 Teaspoon (for greasing)

Directions

GETTING READY
1. Preheat an oven to 162.5 C (325F).
2. In a medium sized bowl, place egg whites. Beat well till foam stage.
3. Gradually add cream of tartar and beat well till stiff peak stage. Keep aside.

MAKING
4. Grease a casserole (1 quart size) and keep aside.
5. In a medium sized bowl, combine egg yolks and honey. Mix well using a electric blender.
6. Add cinnamon powder, nutmeg powder, skim milk and winter squash and beat till combined.
7. Add beaten egg whites and fold gently using a rubber spatula.
8. Transfer mixture on to greased casserole and bake on middle rack in pre heated oven for 45 minutes or till done.
9. Once baked, remove from oven and keep aside.

SERVING
10. Remove on to a serving platter and serve warm. Alternatively, refrigerate and serve chilled with a fruit sauce.
