Squash Casserole Recipe
Ingredients
| Lean ground beef | 1 Pound | |
| Rice | 1 Cup (16 tbs), washed | |
| Green pepper | 1 Small, chopped | |
| Onion | 1 , chopped | |
| Salad oil | 1/4 Cup (16 tbs) | |
| 1 No. 2 1/2 can tomatoes | ||
| Salt | 1 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| 4 Ige. yellow summer squash, sliced | ||
| Grated cheese | ||
| Dash of paprika | ||
Directions
Brown the beef, rice, green pepper and onion in oil in a heavy skillet, then add tomatoes, salt and basil.
Place the squash in a casserole and top with beef mixture.
Cover.
Bake at 350 degrees for about 30 minutes, stirring once.
Top with grated cheese and paprika.
Return to oven for 15 to 20 minutes longer or until done.
