4 tender squabs
 
1 cup rice
 
3 oranges
 
1/2 cup seedless grapes
 
A little powdered onion
 
2-3 tablespoons oil
 
1-2 teaspoons flour
 
1/2 cup white wine

Directions

Preheat oven to 400°F.
1. Prepare stuffing: Cook rice and let cool. Crate rind of 1 large orange; mix with 8-9 tablespoons cooked rice. Remove pith and skin from 2 oranges with a serrated knife and cut out segments; add these to rice. Dip grapes into boiling water for few seconds, then into cold; peel and add to stuffing with salt, pepper, and little powdered onion. Stuff mixture into squabs.
2. Roast birds as in Squabs Stuffed with Almonds and Raisins
3. Pour away oil and sprinkle in flour, blend with pan drippings and add wine and a little stock. Bring to a boil and simmer for 1 minute. Add juice of 1 orange and a few strips of peel, and serve with the squabs.
