Spiced Spritz Cookies Recipe
Ingredients
350 g/12 oz butter or margarine, softened
225 g/8 oz caster sugar
1 egg, lightly beaten
1 teaspoon vanilla essence
1/2 teaspoon almond essence
575 g/1 1/4 lb plain flour
1 teaspoon baking powder
Decoration
Vanilla sugar ground nutmeg
Directions
Lightly grease two baking trays.
Cream the butter or margarine with the sugar until very soft, light and fluffy.
Gradually add the egg, beating continuously, then beat in the flavourings.
Sift together the flour and baking powder, then work these dry ingredients into the creamed mixture.
Force the mixture through a cookie press on to the prepared baking trays.
Chill for 30 minutes, or longer if you have time.
Bake the biscuits in a moderately hot oven (200 C, 400 F, gas 6) for 10 minutes, or until lightly browned.
Immediately they are removed from the oven, sprinkle the vanilla sugar and a little nutmeg over the cookies.
Leave to cool on the trays for a minute before transferring the biscuits to a wire rack to cool completely.
