Spring Time Veal Recipe

Ingredients
1 lb. of pie veal,
2 tablespoonfuls of flour,
20 small new potatoes,
A handful of French beans,
The same quantity of garden peas,
The heart of a lettuce, cut in four,
10 small carrots,
A few diced asparagus tips,
2 glasses of stock,
Salt, Pepper,
A bunch of mixed herbs,
12 small onions.
Directions
Trim all the fat from the meat, and chop it small.
Render the fat down gently in a pan and then put the pieces of veal and the onions in it, and fry till golden.
Stir in some flour, mix, add the stock, salt and pepper and the bunch of mixed herbs, put on the lid, and leave to simmer for 1 hour on a gentle heat.
Now put all the vegetables into the pan, mix with the sauce and simmer for another hour.
