Spring Time Rhubarb Ambrosia Recipe
Ingredients
1 lb. tender pink rhubarb, cut in 1 -in. pieces (3 to 4 cups)
3/4 cup sugar
1/2 teaspoon ground cinnamon
1 teaspoon grated lemon peel
2 teaspoons lemon juice
Directions
Toss rhubarb with sugar, cinnamon, and lemon peel; turn into a 1 quart casserole.
Drizzle with lemon juice.
Cover and cook in a 350°F oven 20 to 25 minutes, or until tender.
