Ingredients

 
Salad Oil – 1 ½ cups
 
Sugar – 2 cups
 
Hot Water – 3 ½ tablespoons
 
Sifted Cake Flour – 2 ½ cups
 
Cinnamon – 2 ½ teaspoons
 
Baking Soda – 1 ½ teaspoon
 
Salt – 1 ½ teaspoon
 
Raw Carrot – 1 1/2cups, grated (3 large)
 
Nutmeats – 1 cup, finely chopped
 
Egg Whites - 5

Directions

MAKING
1) Mix together the salad oil, sugar, hot water and egg yolks
2) Using an electric mixer neat the ingredients till well mixed
3) Sift together the flour, cinnamon, nutmeg, soda and salt
4) Add in the yolk mixture alternatively with the carrots and the nut meats to the dry ingredients blending well after each addition
5) Using the electric mixer, beat the egg whites till stiff
6) Fold the whites into the batter
7) Pour the butter into3 well greased 9 inch round cake pan
8) Bake in warm oven for 50 -60 minutes till done

SERVING
9) Serve the cake with some cream cheese frosting
