1. Chop the cucumber and green onions into two inch long pieces, set aside.
2. Cut the pork slices into strips, set aside.
MAKING
3. In a pot boil water, add the rice noodles and cook for 8-10 minutes, keep stirring.
4. Once done remove and drain the water, and rinse under cold water, set aside.
5. Soak the spring roll wrapper in the warm water for 10 second.
6. Place it on a plate, add small lettuce piece, pork, shrimps, bean sprouts, parsley, green onion, noodles and cucumber.
7. Roll the wrapper tightly and bring in the open edges and roll it again.
SERVING
8. Serve the spring roll with sweet and sour sauce.
