Spring Green Salad With Mint Vinaigrette Recipe

1 head leaf lettuce 1
 
1 bunch fresh spinach 1
 
8 cherry tomatoes, halved 8
 
6 green onions, chopped 6
 
1/3 cup vegetable oil 75 mL
 
1/4 cup white wine vinegar 50 mL
 
1/4 cup granulated sugar 50 mL
 
2 Tb chopped fresh mint 25 mL
 
1/2 tsp salt 2 mL
 
1/4 tsp pepper 1 mL
 
Pinch dry mustard Pinch

Directions

Wash and dry lettuce and spinach leaves; tear into bite size pieces.
In large salad bowl, combine lettuce, spinach, tomatoes and green onions; refrigerate up to 1 hour.
In jar with tight fitting lid, combine oil, vinegar, sugar, mint, salt, pepper and mustard; shake well until sugar has dissolved.
Just before serving, add dressing to salad; toss well.
