 Spring rolls
 Parma ham 400 g - thinly sliced
 Rice paper or 'nem' skins 8
 Yellow melon 200 g - thinly sliced
 Salad200 Gram, mixed
 Mixed herbs 400 g - basil, parsley, and coriander
 Vinaigrette
 Balsamic vinegar4 Tablespoon
 Olive oil8 Tablespoon
 Salt, pepper

Directions

Spread out 2 rice papers, one and a half sheets in length to make a longer and stronger piece.
Cover with slices of Parma ham, then with salad leaves.
Season slices of melon with the vinaigrette.
Place the melon on the salad leaves, add some herbs and roll the whole to make 1 big roll of 4 cm diameter.
Cut into 3 pieces.
Arrange the 3 pieces in the middle of a plate with a vinaigrette dressing
