Spring Onion Soup Recipe

Ingredients

 
125g unsalted butter
 
1 eating apple, peeled and chopped
 
Salt
 
125ml soured cream
 
1.5 litres skimmed chicken stock
 
Freshly ground black pepper
 
8 bunches spring onions
 
2 large cloves garlic, coarsely chopped

Directions

Coarsely chop 6 bunches of spring onions, reserve 2 bunches.
Melt butter in a saucepan, add spring onions, apple and garlic.
Stir fry until soft.
Add chicken stock, bring to the boil.
Reduce heat, simmer uncovered for 30 minutes.
Pour soup into a food processor and puree Sieve back into the saucepan.
Season to taste Slice remaining spring onions, into thin rings.
Add to soup, reserving a few onions for garnish.
Bring soup to the boil.

folks will get clogged arteries if they consume so much butter. 125 gms is far too much!!
