Spring Breeze Cod Recipe

Ingredients

 
1 lb (500 g) fresh asparagus
 
1/4 cup (60 mL) cold water
 
3 tbsp (50 mL) unsalted butter or olive oil
 
2 medium garlic cloves, minced
 
1/4 cup (60 mL) fresh parsley, minced
 
1/2 tsp (2 mL) tarragon
 
2 lb (1 kg) fresh cod, cut into 6 fillets
 
Rind and juice of half a lemon
 
Salt and pepper to taste
 
3 tbsp (50 mL) heavy cream

Directions

€¢ Snap off the tough lower portion of each asparagus stalk; it will break where the tender part begins.
€¢ Wash the asparagus and place in a dish.
€¢ Add the cold water and a pinch of sugar.
€¢ Cover and microwave 5 to 7 minutes at HIGH, or until the asparagus is tender. Check doneness with the point of a knife.
€¢ Remove the asparagus from its juice, setting it aside. Keep the asparagus warm.
€¢ Place the butter or oil, garlic, parsley and tarragon in a baking dish.
€¢ Microwave 3 minutes at HIGH, stirring once.
€¢ Top with the fish, add the lemon rind and juice and the asparagus cooking juice. Salt and pepper to taste.
€¢ Cover. Microwave 6 minutes at MEDIUM-HIGH.
€¢ Place the asparagus over the fish, cover and microwave 2 minutes at MEDIUM.
€¢ Place the fish and asparagus in a warm serving dish.
€¢ Add the cream to the juice in the cooking dish, microwave 3 minutes at HIGH, stir well and pour over the fish.
