Spoon Bread Spud Muffins Recipe
Spoon bread spud muffins are warm and crusty snack to offer. They are so easy to make and are a complete comfort food. Enjoy the spoon bread spud muffin little hot!!
Ingredients
Butter-1 tablespoon
Salt-to taste
Instant mashed potatoes- for 2 servings
Eggs-2
Milk-3/4 cup
Cornmeal-1 cup
Baking powder-1 teaspoon
Cooked bacon-4 slices, crumbled
Directions
MAKING
1)In a saucepan, add 3/4 cup water, butter and 1/2 teaspoon salt and bring to boil.
2)Add instant mashed potatoes and mix beat until well blended.
3)Add eggs, one at a time and beat well after each addition. Then, add milk.
4)In a bowl, mix cornmeal, baking powder and 112 teaspoon salt.
5)Add it into potato mixture.
6)Take eight greased 2 3/4-inch muffin cups and fill the mixture into them.
7)Top with crumbled bacon.
8)Bake at 400 degrees for 20 minutes.
SERVING
