Ingredients
3/4 cup sifted cake flour
1 tsp baking powder
1/4 tsp salt
3 egg yolks
1/2 cup sugar
1/4 cup boiling water
1 tsp vanilla
1/2 tsp lemon extract
Directions
Heat oven to 350 degrees.
Grease and flour an 8-inch square cake pan.
Sift flour, baking powder and salt together.
Put egg yolks in small mixer bowl and beat at high speed until very thick and lemon colored (about 5 minutes).
Beat in sugar gradually.
Blend in water and flavorings at low speed.
Quickly fold in dry ingredients.
Pour into prepared pan and bake until the top springs back when touched lightly in the centre, about 25 minutes.
Cool in pan about 10 minutes, then remove and finish cooling on rack.
