Sponge Layers Recipe

Ingredients
3/4 cup sifted cake flour
1 teaspoon baking powder
1/4 teaspoon salt
4 eggs, separated
1/2 cup granulated sugar
1/2 teaspoon almond extract
2 tablespoons water
Directions
1. Preheat oven to moderate (375° F.).
2. Sift together the flour, baking powder and salt.
3. Beat the egg whites until stiff, adding half the sugar gradually.
4. Beat the egg yolks until thick and add the remaining sugar gradually. Beat until very thick and add the almond extract. Add the water gradually while beating and fold in the egg white mixture. Sift about one-third of the flour mixture at a time over the top and fold in.
5. Turn the mixture into a jelly-roll pan that has been lined with waxed paper. Bake about eighteen minutes. Turn out on a cooling rack, remove the paper and cut in half. Fill with any desired filling.
