 Green peas1 pound, dried
 Cold water2 1/2 Quart
 Ham bone1 Pound
 1 small onion, studded with 2 whole cloves
 Salt2 Teaspoon
 Pepper1/4 Teaspoon
 Dried thyme1/8 Teaspoon
 Bay Leaf1
 2 leeks (white part plus 1 inch of green), well cleaned and thickly sliced
 2 carrots, scraped and cut into large chunks
 Celery ribs2
 Parsnip1 Large

Directions

Pick over and rinse peas; add to water in a large soup pot.
Add ham bone with meat, clove-studded onion, salt, pepper, thyme and bay leaf.
Cover and simmer 2 hours.
Discard clove-studded onion and bay leaf.
Remove ham bone and cut off meat; set aside.
Add vegetables to soup.
Simmer 30 to 45 minutes or until vegetables are tender and peas are reduced to a thick porridge.
Cut reserved meat into chunks and add to soup to heat through.
