Split Pea Soup Jardiniere Recipe

Ingredients
| Green peas | 1 pound, dried | |
| Cold water | 2 1/2 Quart | |
| Ham bone | 1 Pound | |
| 1 small onion, studded with 2 whole cloves | ||
| Salt | 2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Dried thyme | 1/8 Teaspoon | |
| Bay Leaf | 1 | |
| 2 leeks (white part plus 1 inch of green), well cleaned and thickly sliced | ||
| 2 carrots, scraped and cut into large chunks | ||
| Celery ribs | 2 | |
| Parsnip | 1 Large | |
Directions
Pick over and rinse peas; add to water in a large soup pot.
Add ham bone with meat, clove-studded onion, salt, pepper, thyme and bay leaf.
Cover and simmer 2 hours.
Discard clove-studded onion and bay leaf.
Remove ham bone and cut off meat; set aside.
Add vegetables to soup.
Simmer 30 to 45 minutes or until vegetables are tender and peas are reduced to a thick porridge.
Cut reserved meat into chunks and add to soup to heat through.
Add ham bone with meat, clove-studded onion, salt, pepper, thyme and bay leaf.
