Directions

1. In a large stock pot heat the oil over medium heat.
2. Add the onion, garlic, and carrot. Cook until the onions are translucent.
3. Add the ham bone, split peas, and enough water to cover all the ingredients.
4. Add the salt and pepper.
5. Bring to a boil and lower to a simmer. Cook for 2 hours or until the split peas have almost disapeared.
