Ingredients
Dried split peas - 1 cup
Cold water - 7 cups
Ham bone or small shank end of ham - 1
Medium onion - 1, sliced
Lemon - 1 1/2 slices
Carrots - 2, sliced
Celery stalks - 3 with tops on, sliced
Salt and pepper to taste
Directions
GETTING READY
1. Wash the peas and then soak them in 2 cups of the water for 4 hours or overnight.
MAKING
2. Cut off some of the ham fat and set aside
3. In a large pan, tip in the ham fat and sauté onion in it until golden.
Combine onion, peas, ham, lemon, carrots, celery, salt and pepper and remaining 5 cups water. Cover, bring to a boil, and simmer for 3 hours until the peas' are tender and the soup, thick.
Set aside to cool and then skim off any surface fat.
SERVING
4. Serve with crisp croutons.
TIP
If you like a smooth soup, rub through a coarse sieve.
