Ingredients

1 cup dried split peas
7 cups cold water
A ham bone or small shank end of ham
1 medium onion, sliced
1 1/2 slices lemon
2 carrots, sliced
3 celery stalks with tops on, sliced
Salt and pepper to taste

How to make Split Pea Soup

Soak peas in 2 cups of the water for 4 hours or overnight.
Remove a little of the ham fat and saute onion in it until golden.
Combine onion, peas, ham, lemon, carrots, celery, salt and pepper and remaining 5 cups water.
Cover, bring to a boil, and simmer for 3 hours until the peas' are tender and the soup, thick.
If you like a smooth soup, rub through a coarse sieve.
Skim off any surface fat.
Serve with crisp croutons.
