Split Peas Winter Soup Recipe Video

Ingredients

 
1 Tbs butter
 
1 chopped onion
 
3 stalks celery
 
3 large carrots
 
1 lb split green peas (dried)
 
2 cups water
 
2 qts additional liquid (chicken stock,
 
vegetable stock or water)
 
salt and pepper
 
1 tsp garlic powder
 
1 bay leaf, optional
 
6 oz ham steak, cubed

Directions

Wash, drain and pick over peas. Soak in 2 cups cold water for
1-4 hours. Melt butter in soup pot, saute chopped onions, carrots and
celery until onion softens. Add peas and liquid to pot, add additional
liquid and bring to a boil. lower heat and simmer for 1-2 hours, or
until peas start to disintergrate. Stir occasionally. Remove bay leaf, mash with potato
masher add ham and cook 15 more minutes to blend flavors.

I added a 1/2 can of RO-TEL tomatoes & chilies and kicked it up a notch! Oh, I finished it with a squiggly line of sour cream and croutons.
