Split Pea Or Lima Bean Puree Recipe
Ingredients
Split peas or dried lima beans- 1 cup
Water- 2 quarts
Flour- 1 tablespoon
Onion-juice- 1 teaspoon
Butter or other fat- 2 tablespoons
Salt and pepper- to taste
Directions
MAKING
1.In a bowl, pour water and soak peas or beans all night
2.Boil the bowl full of peas or beans and water
3.Make sure to cook slowly until the peas or beans become soft
4.Take a strainer and rub the peas or beans through a sieve
5.Now heat it and thicken with roux of flour and fat
6.Season with salt, pepper, and onion juice
7.Keep stirring until smooth
SERVING
8.Serve with rice or bread
