Split Pea Soup with Roasted Pork Belly Recipe

  Split Peas.
SPLIT PEAS: These great dried peas have been used as healing remedies as well as a great protein source for hundreds of years. They are nutritious and delicious with anti-depressant, anti-anxiety properties, great for the Virgo nervous system. Other health properties also include fiber, tryptophan, manganese and folate, all which will stimulate the touchy nervous systems of those who are prone to depression, which plagues the over-worked Virgo. A nice bowl of split pea soup will really sooth those frazzled nerves!

Recipe Story

I started using pork belly with this because of my husband. It reminds him of his European roots.

Ingredients

 12 thick slices pork belly
 1 onion, diced small
 2 carrot, peeled and diced small
 3 stalks celery, diced small
 Garlic3 Clove (5gm), minced
 Chicken stock6 Cup (16 tbs)
 Split peas1 pound, washed
 Bay leaf1
 Thyme sprig6
 Italian parsley1/2 Cup (16 tbs), chopped
 Salt To Taste
 Pepper To Taste

Directions

1. Heat a large heavy bottomed pot over medium heat. Cook the pork belly until crisp and transfer to a paper towel to remove the excess fat. Leave just enough of the fat from the pork belly to brown the vegetables. Add the onions, carrot, celery and garlic and sauté until the onion is translucent. Add the  water, split peas, bay leaf and thyme. 
 
2. Crumble 8 pieces of pork belly and add to the soup. Bring to boil, reduce heat and simmer for one hour and a half or until the peas are soft, stirring occasionally. Season with the salt and fresh ground pepper. Ladle the soup into the bowls and garnish with the parsley and the pork belly pieces.
