Split Pea And Smoke Ham Soup Recipe

Ingredients
1 pound (2 cups) dried green split peas
1 quart water 2/3 cup chopped onion
1/4 cup sliced carrot
3 sprigs parsley
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground thyme
1 can (13 3/4 ounces) chicken broth (about 1 1/2 cups)
2 cups water
1 medium smoked ham hock

Directions
1. Put split peas irito a large bowl, add water to cover peas and cover bowl tightly; let soak overnight.
2. Drain peas and put into a 3-quart glass casserole and pour 1 quart water over peas. Cook uncovered in microwave oven 40 minutes
at High.
3. Add remaining ingredients except croutons to casserole. Cover with plastic wrap. Cook in microwave oven 20 minutes at Medium. Remove ham hock; cut off and reserve meat. Puree soup in blender or food processor.
4. Return soup to casserole and add reserved meat. Heat uncovered in microwave oven to serving temperature (about 10 minutes at High, or if using Temperature Probe, set at 160°F and at High).
