Split Pea Soup Recipe
Ingredients
| 1 ham hock or meaty ham bone | ||
| 1 pound split peas, rinsed and sorted | ||
| Water | 3 Quart | |
| Lean bacon slice | 5 , chopped | |
| Carrot | 1 , chopped | |
| Onion | 1 Cup (16 tbs), chopped | |
| Parsley | 1/4 Cup (16 tbs) | |
| Thyme | 1/2 Teaspoon | |
| Bay leaves | 2 | |
| 1/2 cup green part of leeks or green onion | ||
| Salt | To Taste | |
| black pepper | 1 | |
Directions
Place ham hock, split peas, and water in a large soup kettle and bring to boil.
Reduce heat and simmer, covered.
Saute' bacon until fat is rendered.
Stir in carrot and onion.
Saute' until bacon is browned.
Add to soup kettle with the rest of the ingredients.
Simmerfor3 hours or until meat falls off the bone.
Slice meat into serving pieces and discard bone.
Add meat to soup; taste and correct seasonings.
