Split Pea Minestrone Recipe
Ingredients
| Zucchini | 2 Cup (16 tbs), sliced | |
| Mushrooms | 1 1/2 Cup (16 tbs), sliced | |
| Onion | 6 Ounce, chopped | |
| Celery | 1/2 Cup (16 tbs), diced | |
| 3 cups Ham or Chicken Stock | ||
| 1 pound cooked dried split peas | ||
| Salt | 1/2 Teaspoon | |
| Basil | 1/2 Teaspoon | |
| Black pepper | 1 To taste | |
| 12 ounces peeled, cooked potatoes, diced (optional) | ||
Directions
In a large saucepan combine zucchini, mushrooms, onions, and celery.
Cook about 5 minutes.
Add remaining ingredients, except potatoes.
Simmer stirring occasionally about 45 minutes or until soup thickens.
Add water to adjust consistency if necessary.
Add potatoes, if desired.
Cook 10 minutes.
Divide evenly.
