Ingredients

 Zucchini2 Cup (16 tbs), sliced
 Mushrooms1 1/2 Cup (16 tbs), sliced
 Onion6 Ounce, chopped
 Celery1/2 Cup (16 tbs), diced
 3 cups Ham or Chicken Stock
 1 pound cooked dried split peas
 Salt1/2 Teaspoon
 Basil1/2 Teaspoon
 Black pepper1 To taste
 12 ounces peeled, cooked potatoes, diced (optional)

Directions

In a large saucepan combine zucchini, mushrooms, onions, and celery.
Cook about 5 minutes.
Add remaining ingredients, except potatoes.
Simmer stirring occasionally about 45 minutes or until soup thickens.
Add water to adjust consistency if necessary.
Add potatoes, if desired.
Cook 10 minutes.
Divide evenly.
