Directions
1. Drain the peas and place in a pan with the vegetables, herbs and water. Boil for 10 minutes, then cover and simmer for about 40 minutes, until the peas are tender.
2. Transfer to a blender or food processor, add the flour and work until smooth. If the puree isn't very thick, return to the saucepan and stir over a moderate heat for 1-2 minutes, then return to the blender.
3. Blend in the egg and season with salt and pepper.
4. Heat a little oil in a frying pan and fry heaped tablespoons of the mixture until golden brown on both sides. Garnish with lemon and parsley and serve immediately.
