Spit Roasted Pork Recipe
|Canned apple sauce||1 Pound (1 Can)|
|Dry white wine||1⁄4 Cup (4 tbs)|
|Soy||1⁄2 Cup (8 tbs)|

|Garlic||1 Clove (5 gm), minced / mashed|
|Ground ginger||1 Teaspoon|
|Whole pork leg||12 Pound, boned and rolled|

Marinate the pork in this mixture for at least 1 hour.
Place on spit, and roast over medium coals until well done, 6 to 7 hours for the 12-pound roast (internal temperature on meat thermometer should read 185°).
Baste frequently with the marinade as it roasts.
When done, remove from spit, slice and serve on a large platter.
For a sauce to go with the meat, add the remaining 1 cup apple sauce to the marinade that's left; heat and serve.
