Directions

Truss duckling compactly and spit it from just in front of the tail (through the bone), diagonally to a point near the apex of the wishbone (again through the bone).
Spit-roast the duckling 1 1/2 to 2 hours over a medium to low barbecue fire.
Baste frequently with sauce made by combining orange juice, soy, honey, monosodium glutamate, and pepper; heat sauce on the side of the grill and brush it warm on the bird.
Using poultry shears, cut duckling into quarters to serve
