Spinach Quiche Recipe

Ingredients

 
1/2 recipe for pastry for 2-crust 9-inch pie
 
1/2 cup grated
 
Swiss cheese
 
1 1/2 cups cream-style cottage cheese
 
1/3 cup light cream
 
4 eggs
 
1 1/2 tsp salt
 
1/4 tsp pepper
 
Dash of nutmeg
 
12-oz. pkg. frozen spinach, cooked, drained and chopped
 
2 tbsp chopped hives
 
1 tbsp butter
 
1 small onion, sliced paper-thin

Directions

Heat oven to 475 degrees.
Line 9-inch pie pan with pastry, building up a high fluted edge.
Bake for 3 minutes.
Reduce oven temperature to 350 degrees.
Sprinkle Swiss cheese evenly over bottom of pie shell.
Beat cottage cheese, cream, eggs, salt, pepper and nutmeg together to blend well.
Stir in spinach and chives.
Pour into prepared pie shell.
Heat butter in small skillet and add onion.
Cook gently, stirring, until golden.
Spoon over cheese mixture.
Cover edge of pie shell with a narrow strip of aluminum foil to keep it from browning too much.
Bake about 45 minutes or until nicely browned and filling is set in centre.
Serve hot.
