Ingredients

 Prepare your favorite unsweetened, double,
 10" crust, (optional) Steam until barely done
 10 - 12 OZ. SPINACH Drain well.
 Add
 1 LB. TOFU, MASHED WELL WITH A FORK
 2 EGGS, LIGHTLY BEATEN
 Cheddar Cheese2 1/2 Cup (16 tbs), grated
 Salt1 1/2 Teaspoon

Directions

Turn into the prepared crust or a 10" oiled casserole.
If a crust is used, top with the upper crust, flute the edges and prick with a fork. Bake at 450° for 10 minutes, reduce heat to 350° and bake an additional 45 - 50 minutes. If a crust is not used, bake at 350 ° for 30 - 40 minutes.
