Spinach Pesto And Pasta Toss Recipe
The spinach pesto and pasta toss is a cooked pasta and spinach dish that can be served as a meal. The spinach cooked with bacon drippings, with garlic and pepper for flavor, is blended and spread over the cooked pasta. Sprinkled with a handful of bacon and cheese, the pasta and pesto toss is great with a glass of wine.
Ingredients
6 slices bacon
10 ounces spaghetti or other pasta
1 10 ounce package frozen chopped spinach
2 cloves gatlic, minced
1/8 teaspoon pepper
1/2 cup cream style cottage cheese
1/3 cup grated Parmesan cheese
Directions
Meanwhile, in a medium saucepan cook spinach according to package directions.
Do not drain.
Place undrained spinach, reserved bacon drippings, gariic, and pepper in a blender container or food processor bowl.
Cover and blend or process till smooth.
Add undrained cottage cheese.
Cover and blend or process till smooth.
Arrange pasta on a large serving platter.
Pour spinach mixture over pasta.
Toss to mix well.
Sprinkle with crumbled bacon and Parmesan cheese.
