Spinach Pan-Cakes Recipe

Directions
Mix the flour, eggs, milk and seasoning together.
Pour a little of this batter into a frying pan, spreading it evenly by tilting the pan.
Allow to cook for 2 or 3 minutes until the pancake is crisp and brown, then turn and cook on the other side.
Continue doing this till the batter is finished.
Turn or toss and cook on the other side.
Fill each pancake with some of the spinach and serve.
Keep hot on a dish over a pan of water.
when all the pancakes are cooked, add cheese or ham or peas to the white sauce and pour it over the top.
NOTE : If preferred, all the pancakes may be kept ready, each one spread with the filling and then piled one on top of the other, so that it resembles a cake.
Cut into large slices and serve with cheese sauce Serve the sauce seperately or pour it over the cake before cutting it.
