Spinach Nuggets Recipe

Ingredients
2 10 ounce packages frozen chopped spinach
1 tablespoon dried minced onion
3 tablespoons margarine or butter
1 cup herb-seasoned stuffing mix
1 cup grated Parmesan cheese
2 beaten eggs
Directions
In a saucepan cook the spinach and dried onion according to spinach package directions.
Drain well.
In a mixing bowl stir together hot spinach mixture and margarine or butter till butter melts.
Add stuffing mix and cheese.
Stir in eggs.
Shape into 1 inch balls. (If desired, place spinach balls in a shallow pan.Cover and freeze about 1 hour or till firm.Transfer spinach balls to freezer containers.Seal, label, and freeze up to 4 months.) Place unfrozen spinach balls on a greased baking sheet.
Bake in a 375° oven about 7 minutes or till heated through.(Or, place frozen spinach balls in a shallow baking pan.Bake in a 375° oven for 15 to 20 minutes or till heated through.)
