Directions

Thaw frozen spinach quickly by rinsing spinach with running hot water to separate and remove ice crystals; drain.
Mix Meat Mixture ingredients.
On 18x15 inch piece of aluminum foil, pat meat mixture into rectangle, 12x10 inches.
Arrange spinach evenly on meat mixture, leaving 1/2 inch margin around edges.
Sprinkle the 1 teaspoon salt on spinach; arrange ham on top.
Carefully roll up meat, beginning at narrow end and using foil to lift meat.
Press edges and ends of roll to seal.
Place on rack in ungreased baking pan, 13x9x2 inches.
(To serve immediately, see below.) Cover with plastic wrap and refrigerate.
1 hour 35 minutes before serving, have ready: 3 slices mozzarella cheese, cut diagonally into halves.
Bake Spinach Meat Roll uncovered in 350° oven 1 1/2 hours.
Overlap cheese triangles on roll; bake just until cheese begins to melt, about 5 minutes.
(Center of meat roll may be slightly pink due to ham.) Nice served with chili sauce.
To Serve Immediately: Have ready: 3 slices moz zarella cheese, cut diagonally into halves.
