Spinach Cheese Tart Recipe

Cheese Pastry for 1 Crust Pie
 
3 cups coarsely chopped cooked spinach
 
1/2 cup shredded Parmesan cheese
 
1/2 cup minced onion
 
1/4 cup heavy cream
 
1/4 cup butter or margarine, melted
 
1/2 cup cracker crumbs
 
2 tablespoons butter or margarine, melted

Directions

Prepare pastry shell; partially bake only about 8 minutes, or until slightly browned.
Remove pastry shell from oven to a wire rack and reduce oven temperature to 375°F.
Meanwhile, combine spinach, cheese, onion, cream, and 1/4 cup butter; mix thoroughly.
Turn spinach mixture into partially baked pastry shell.
Sprinkle with a mixture of crumbs and remaining butter.
Return tart to oven and bake about 15 minutes, or until pastry and crumbs are golden brown and spinach mixture is heated through
