Spinach and Yogurt Recipe

Ingredients

 Olive oil3 Tablespoon
 Onion1 Small, finely chopped
 1 pound spinach, trimmed, washed, coarsely chopped, cooked and drained
 1 8-ounce container plain yogurt
 Garlic1 Clove (5gm), crushed
 1/2 teaspoon crushed dried mint Salt and freshly ground black pepper to taste
 Finely chopped walnuts2 Tablespoon, toasted

Directions

Heat oil over medium heat in heavy skillet.
Add onion; saute until golden, stirring frequently.
Add spinach and saute a few minutes.
Remove from heat.
Combine yogurt, garlic, mint, salt and pepper in large bowl until well blended.
Gradu-ally stir in spinach mixture; blend thoroughly.
Taste and adjust seasoning.
Transfer to serving bowl, cover and chill 2 hours.
Serve sprinkled with walnuts.
