Spinach and Yogurt Recipe
Ingredients
| Olive oil | 3 Tablespoon | |
| Onion | 1 Small, finely chopped | |
| 1 pound spinach, trimmed, washed, coarsely chopped, cooked and drained | ||
| 1 8-ounce container plain yogurt | ||
| Garlic | 1 Clove (5gm), crushed | |
| 1/2 teaspoon crushed dried mint Salt and freshly ground black pepper to taste | ||
| Finely chopped walnuts | 2 Tablespoon, toasted | |
Directions
Heat oil over medium heat in heavy skillet.
Add onion; saute until golden, stirring frequently.
Add spinach and saute a few minutes.
Remove from heat.
Combine yogurt, garlic, mint, salt and pepper in large bowl until well blended.
Gradu-ally stir in spinach mixture; blend thoroughly.
Taste and adjust seasoning.
Transfer to serving bowl, cover and chill 2 hours.
Serve sprinkled with walnuts.
