 1 cup cooked, drained chopped spinach
 Ricotta cheese1/3 Cup (16 tbs)
 Egg1 , beaten
 1 slice bread, made into crumbs
 Dash nutmeg
 Salt To Taste
 Pepper To Taste

Directions

Squeeze out liquid from spinach.
In small saucepan over low heat cook spinach, with cheese, salt and pepper.
Stir frequently to prevent burning.
When mixture is hot, remove from heat, stir in egg, bread crumbs and nutmeg, mixing well.
Chill for 2 hours or longer.
Drop by rounded teaspoonfuls onto non-stick baking sheet (or sheet lined with aluminum foil), and bake at 400° F. for 15 minutes or until browned.
