Spinach and Radish Soup Recipe
Ingredients
100 gms. Butter
1 Small Bunch of radishes finely sliced
8 Carrots finely slice
2 Onions chopped
125gms. Spinach leaves
5 Cups of water finely shredded
Salt & Pepper
(2 egg yolks, 2tbl.sp.
white wine 50 gms. Cream)
Directions
Melt the butter in a saucepan & saute the onion & carrots for 5 minutes.
Add the water and simmer for 10 minutes.
Add radish and spinach to the soup and season.
Cook until the spinach is tender, but the radishes are still slightly crisp, and blend in a liquidiser.
Beat yolks with cream.
Add a few spoonfuls of soup and stir into the rest of the soup.
Add wine and heat through.
Adjust seasoning and serve.
