Ingredients

 
1 large onion finely chopped
 
1 bunch green onions chopped
 
2 tablespoons melted butter
 
1/4 pound mushrooms chopped
 
1 1/2 pounds spinach finely chopped
 
1/2 cup chopped parsley
 
1/8 teaspoon nutmeg
 
salt and pepper to taste
 
3 eggs beaten
 
1/4 cup each shredded Parmesan and Swiss cheese
 
5 sheets filo dough

Directions

Using a large frying pan, saute onion and green onions in 1 teaspoon butter until limp.
Add mushrooms and cook until glazed.
Add spinach and heat until barely wilted.
Remove from heat and drain off any extra liquid.
Mix in parsley, nutmeg, salt, pepper, eggs, and cheese.
Lay out 1 sheet of filo and brush lightly with melted butter; cover with a second sheet, butter lightly, and repeat layering remaining sheets and buttering between.
Spoon spinach mixture along a long side; fold up ends of filo 1 inch and roll up the dough, encasing the spinach.
Place seam side down on a lightly buttered pan.
Bake in 375° oven for 40 minutes or until crispy and browned.
Cut in 2 inch slices and serve warm.
