Ingredients

 Spinach 1 1/2 Pound
 1 medium size red onion, thinly sliced and separated into rings
 Mushrooms1/2 pound, thinly sliced
 Feta cheese1 Cup (16 tbs), crumbled
 Lemon juice1/4 Cup (16 tbs)
 Oregano leaves1/2 Teaspoon
 Garlic2 Clove (5gm), pressed
 Salt1/4 Teaspoon
 Olive oil1/3 Cup (16 tbs)
 Ground pepper1 To taste

Directions

Remove and discard tough stems and tear large leaves into bite size pieces.
In a large bowl, combine spinach, onion, mushrooms, and cheese.
In a small bowl, mix lemon juice, oregano, garlic, and salt.
Drizzle oil over vegetables, tossing to coat spinach, then pour lemon juice mixture over all and mix lightly.
Grind pepper over each serving to taste.
Serve immediately.
