Ingredients
| 3 pounds spinach, trimmed, coarsely chopped and washed | ||
| Onion | 1 Medium, minced | |
| Garlic | 1 Clove (5gm), minced | |
| Olive oil | 2 Tablespoon | |
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
| Pignoli nuts | 4 Tablespoon | |
| 1 to 2 cups plain yoghurt, depending on taste | ||
| 2 tablespoons minced fresh mint or 2 teaspoons dried mint | ||
Directions
Combine the spinach, onion and garlic in a saucepan.
Cook covered over medium heat, without additional water, for 5 minutes, tossing the pan frequently to prevent sticking.
Drain off any moisture.
Add the olive oil.
Cook, stirring constantly, for 3 more minutes.
Season with salt and pepper.
Mix in the pignoli nuts.
Remove from heat and stir in the yoghurt.
Turn into a serving dish and sprinkle with the mint.
