Spinach - 2 3/4 Lb
Shallots - 4 or
Bermuda onion - 1
Butter - 3 tbsp
Salt

Directions
GETTING READY
1 Wash the young, tender spinach leaves well.
2 Peel and chop the shallots or Bermuda onion finely.
MAKING
3 In a pan, heat the butter.
4 Add in the shallots and cook until tender but not at all browned.
5 Add the spinach leaves, and fry them for a few seconds.
6 Stir to coat with butter.
7 Cover and cook over low heat for 2-3 minutes.
8 They should still be fairly crisp.
9 Sprinkle with a little salt and freshly ground pepper
SERVING
10 Serve at once.
