Ingredients

 
3/4 cup vegetable juice
 
1 garlic clove, chopped
 
2 cups spinach, finely shredded
 
2 tsp corn starch
 
4 tsp cold water
 
1/4 tsp ground nutmeg
 
Salt and pepper
 
1 hard boiled egg, chopped

Directions

In a saucepan, bring vegetable juice to a boil.
Mix in garlic and spinach Over low heat, continue cooking 2 minutes or so.
Dilute cornstarch in cold water.
Pour into saucepan, mixing well.
Season.
While stirring, continue cooking until sauce thickens.
Divide spinach among 4 plates.
Sprinkle with chopped egg.
