Spinach With Pine Nut Dressing Recipe
Ingredients
3/4 cup toasted pine nuts, coarsely chopped
1/2 teaspoon tarragon
1/4 teaspoon grated lemon peel
1/8 teaspoon nutmeg
1/2 cup salad oil or olive oil
1/2 cup vinegar
1/2 teaspoon salt
Spinach leaves or half spinach and half butter lettuce
Nutmeg
Directions
To toast nuts, spread them in a single layer on a pan; bake in a 350° oven for 5 minutes.
Shake pan occasionally.
Blend nuts with tarragon, lemon peel, nutmeg, salad oil, vinegar, and salt.
Mix well before using.
Allow 2 tablespoons dressing for each cup of greens.
Sprinkle each salad lightly with nutmeg.
