Spinach with Pine Kernels and Sultanas Recipe
Ingredients
| 2 pounds or 4 ounces fresh young spinach, washed | ||
| Olive oil | 3 Tablespoon | |
| Pine nuts | 1 Ounce | |
| Golden Raisins | 1 Ounce, soaked | |
Directions
Place the spinach in a large saucepan with a tightly fitting lid; you will not need to add any more water if the spinach is still damp from washing, otherwise a splash will do.
Cook the spinach over a medium heat until it has wilted, you may want to give it a stir after a couple of minutes.
Drain the spinach; oh and do save the juice, it makes a delicious drink.
Chop the spinach roughly.
Heat the olive oil in a frying pan.
Add the pine kernels (pine nuts) and fry until they begin to brown, then add the spinach and sultanas (golden raisins).
Toss everything in the oil and heat through.
Taste for salt and pepper and serve.
