Spinach with Olives, Raisins, and Pine Nuts Recipe

Ingredients
| 1 pound fresh spinach, well-washed, tough stems removed | ||
| Garlic | 1 Clove (5gm), mashed | |
| Olive oil | 2 Tablespoon | |
| Kalamata olives | 2 Tablespoon, sliced | |
| Golden Raisins | 2 Tablespoon | |
| Pine nuts | 2 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Steam the spinach in just the water that clings to the leaves after washing, adding the mashed garlic to the pan.
Stir often; add more water if needed.
Drain the spinach and remove the garlic.
Season with salt and pepper to your taste.
(You can omit salt entirely.) Heat the oil in a large skillet; cook the olives, raisins, and pine nuts until the nuts are golden; don't let them brown.
Add the cooked spinach and saute 1 minute before serving.
